Crustless Quiche
I haven't sliced it yet it is just out of the oven...
Serves 4 (about 195 cal)1 Tbsp Butter
½ C Chopped Onion
1C Broccoli florets
¼ C Julienne Ham
1C Sliced Mushrooms
1-½ C Skim Milk
5 Eggs
1T Flour (or GF equiv. thickening agent)
Dash Salt & Pepper
¼ tsp Bottled Red Pepper Sauce
¾ C Swiss Cheese grated
Preheat oven to 325F
Lightly grease a quiche dish or 7-8in pie plate
Melt butter over low heat in a medium fry pan. Add onion, broccoli and mushroom, sprinkle with 1/8 tsp salt. Cover and cook 10min over medium heat, stir occasionally. Add ham and cook uncovered 5 min or until all liquid has evaporated. Place cooked ingredients into prepared dish.
In blender combine milk, eggs, flour, ½ tsp salt, pepper and red pepper sauce and blend until smooth, pour over cooked veggies. Add cheese, stirring to distribute evenly..
Bake 45-50 minutes or until firm in the center, let stand 5-10 min.
