Eating close to the earth has always been my approace to nutrition.
Growing up a psuedo homesteader certainly taught me the tools of
the trade. As a young girl helping to manage the gardens, canning,
culling, and caring for the herd drove the desire. I no longer manage
a herd but as an adult still work with an organic garden. I I recently
started cooking from Tosca Reno's Clean Eating, this cookbook I do
recommend often. Modifing recipes and substituting clean and/or
organic elements is second nature to myself and my family.

Steel Cut Oat Pilaf

One of our favorite go to recipes as
a side dish is Steel Cut Oat Pilaf the
recipe is quick and simple. This is a
perfect side dish with a taste similar
to stuffing but much better.

Maui Black Bean Soup
I may have to rename this thread to
reflect the amount of soup recipes I have
here. What can I say about this soup, it
has black beans: good, garden tomatoes:
good, celery & onions: good and carrots:
good. You can puree this at this point of
cooking but I never do and instead eat is
just as is.

Tamari Chicken and Rice..

I need a good picture of this recipe, if
you like tamari you will love this
recipe. I like anything that has only a
few ingredients that goes together
quickly after a busy day. I use all
different types of rice for this dish as
we tend to have some left over from
the previous day. The sesame
marinated chicken is a perfect match
the the vegetables. We never have
leftovers when I make this dish.

Energy Muffins
Makes 16 muffins

Who says muffins can’t be delicious and nutritious? When
made at home from good whole ingredients you can have
more than a calorie dense store bought version. These
muffins use whole wheat flour, cottage cheese, egg whites
and protein powder too.

Broccoli Soup - Oxygen #52
I have always had a thing for broccolli soup and
remember the first time I made this soup fondly. It
is quick, easy and ready in what seems like
seconds. I don't know if you keep parsnips in the
house but I do as I like the hint of horseradish this
vegetable offers a dish. I have become enamored
with making my own soups and this is a fun one
to try.

Fish Stew Giardiniera

The weather is very cool and damp today,
nothing I want to spend time outside in. The
laundry is mid process, my workout done so
next something to warm the house and the
belly. This is a house favorite, we like it best
just cooked and with a nice piece of whole
grained bread with a brushing of garlic olive
oil, toasted. I love to put shredded spinach in
the bottom of the soup bowl before serving.

Antioxidant Dried Fruit Compote Recipe
